Risotto de champiñones

Mushroom risotto is a healthy and rich Mediterranean recipe. For the preparation of this dish you need good ingredients, a good broth, good mushrooms and of course, a good cheese.

Ingredients for 4 people:

  • 300 gr. of mushrooms
  • 500 gr. rice
  • 1 onion
  • 3 garlic cloves
  • Olive Oil
  • 1 liter of broth (poultry, vegetables, ham)
  • White wine – 150 ml
  • Shredded cheese

Preparation:

  1. The first step is to carefully clean the mushrooms with the help of a brush or a kitchen paper so that they do not lose their characteristic aroma and flavor. Then cut the onion of a very fine size.
  2. Add olive oil in a casserole along with the onion. When it has a golden tone add the chopped mushroom. We season and continue to sauté. Once we have obtained the mixture add the rice. Let it sauté the mixture for a couple of minutes. Then add a splash of white wine and let the alcohol evaporate.
  3. Then pour the broth. Stir until the rice absorbs it. Repeat the process while the rice simmers approximately 25 min. We are trying the rice to rectify.
  4. Finally, when the risotto is at its point, turn off the heat and add a small tablespoon of butter and grated cheese, and mix until everything is melted. Let stand for 5 min and serve.
