Crème de champignons Neofungi

We will fill the dishes with a delicious mushroom cream to which at home we can give our fresh and personal touch. You will see how!! In addition, this recipe is also, with some modification, an excellent sauce or accompaniment of fillings for tarts or sandwiches. When we have everything, I’ll tell you!

Difficulty: Low. Preparation time: 30 minutes. Ingredients for 4 people:

  • 2 Neofungi mushroom assortment trays.
  • 1 liter of vegetable broth.
  • 60 ml of milk or cream for cooking.
  • 1 small onion.
  • Extra virgin olive oil.
  • Salt and white pepper.
  • Chives or fresh parsley.

Preparation mode:

  1. Wash the mushrooms, chop them as dice and reserve.
  2. Part the onion very thin and with a little oil begin to sauté it in a pan, until it is transparent.
  3. Knot the chopped mushrooms in the pan over medium high heat and let them release their juice.
  4. When the set is liquid, add the vegetable or chicken broth to your liking and let it simmer for 15 minutes.
  5. Remove from heat and put the mixture in a blender glass, but reserve broth and you can add to taste if you want to lighten the cream. Pass well all the ingredients, which are with a creamy and uniform texture.
  6. Put the cream back in the pan and add the milk or cream and stir until it is homogeneous and thickens. Gradually raise the temperature.
  7. Add salt and pepper to taste.
  8. If you want to use the cream for fillings and accompaniments, add little broth and let the cream thicken to your liking, if it is a main course, add more broth and prepare some good bowls, you will see what declicia!
  9. Serve and garnish with a few pieces of fresh chives or parsley.

And as we told you at the beginning, with this recipe we can cover more dishes and appetizers. If you have obtained a thick cream with vegetable broth, it will be an excellent accompaniment for fish and meats. If you also increase the amount of black pepper, you will get that touch of picantón contrast with the meat of the fish or meat, so pleasant and surprising. But it is also an excellent filling for tartlets: with tender ham taquitos, hot with a touch of fresh arugula when serving, with a ball of mozzarella in the middle and a touch of oregano, with nuts, with caramelized onion and goat cheese; or to “dippe” with strips of chicken, morazarella, nuggets, carrot or fresh celery…. and for sandwiches! spread on the two breads with chicken cold cuts, rolled pickle and a slice of fresh cheese: with chicken in strips and lettuce mixture….
